When you want a warm and cozy dinner, this ones for you. This is super easy to make and full of flavor. The recipe is:
1.5 Tablespoon Red Curry Paste
3 cup Stock
3 cup Coconut Milk
1 large lemongrass stalk cut into 2-3 inch pieces
6 slices of ginger
2 thai chilis
1 cup of mushrooms
1 cup of any veggie that sounds good to you – I have used spinach, zucchini, kale, carrots, and more.
1 cup of chicken
Cook the above ingredients how you choose – 20 minutes on high in your instant pot or simmer on your stove for 40 minutes
After cooking add in 3 Tbls lime juice and 1/4 cup chopped basil. Remove lemongrass and ginger pieces before serving.
We serve this with white rice or white rice and riced cauliflower mix and we sometimes drizzle coconut aminos on top for flavor right before enjoying
