This is a fan favorite in our house. My kids love it and devour it and that makes me happy. When you are looking for a fast, easy meal and you don’t want to go to the drive through or get out a meal that comes in one box, then this might be just the one for you. I came up with this recipe when I found that I had leftover pork chops or pork loin and I was looking for a way to make the leftovers new and improved. This is how I make it:
I add the following to my instant pot: 1 cup of white rice (I use white rice for this recipe but you can use other rice choices – you may just have to adjust the cooking time to fit the rice you choose,) 1 and 1/4 cup of broth, 1 cup of chopped cooked pork (or if you have chicken or beef you can substitute either one,) 1/2 cup chopped or small veggies including peas, chopped carrots, chopped onion, etc., 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 tablespoon coconut aminos, a dash of fish sauce if you have it.
Then I turn my instant pot on high, manual, for 3 minutes. When it is finished, I let it rest for 10 minutes. Then I open it and transfer it to a bowl. In the bowl I mix in 3 tablespoons of butter and 2 eggs that have already been scrambled. You can add additional coconut aminos or soy sauce to taste. Then I serve it up, it gets devoured, and we all have a happy evening. It is easy to make, quick to cook, and simple to clean up. I hope you enjoy it too.
