I love miso dressing on salads, roasted veggies, and wild rice. I used to think it was super hard to make, until I blended up the following and loved it! To make my simple and delicious miso dressing, blend together the following:
1 inch peeled and diced ginger root
2 tablespoons of high quality miso paste
1 tablespoon coconut aminos (or soy sauce)
1 teaspoon honey (or 1/2 teaspoon if you are sensitive to sweet flavor)
2 tablespoons Apple Cider Vinegar (or rice vinegar or lemon juice)
3 tablespoons coconut milk
If it is not smooth enough, feel free to strain any ginger that may not of blended. I store this in a mason jar in the fridge for 2-3 days, although it is normally gone before then! You may notice that I offer a lot of substitutions in my recipes. I do this, as I am often making meals out of what I have instead of always having on hand exactly what I want. Even when I meal plan and shop supposedly perfectly, I seem to run out of things or forget that I want to whip up a dressing, etc. So I love being able to make a recipe close enough, but flexible enough to use what I have in my kitchen.
